Abstract

Research describes nutrition education as "paramount" in reducing morbidity and mortality. There is a significant gap between current nutrition taught in graduate health science programs and the 25 hours of nutrition education suggested by the National Research Council. No standard nutrition education guideline exists. There is demand from students, graduate faculty, and legislators to incorporate nutrition knowledge into curricula as evident by the Medical Education Pledge signed at The White House's Conference on Hunger, Nutrition, and Health. Objectives: 1) Gap analysis of graduate health science nutrition education. 2) Develop and disseminate a nutrition guideline proposal for evaluation by stakeholders.
